Best Ever Chocolate Cake


Back in August, Sarah Kate attended the birthday party of one of her best friends, Caroline.  Her mom, Aimee, is one of the best cooks ever.  In fact, she is one of those people who can do anything. She knows how to run a home and how to raise GREAT kids!  Plus, she is soooo funny!

I fell in love with this cake at the party and went completely nuts over it.  Unfortunately, I've made it at least six times since Aimee gave me the recipe in late September.
Aimee got the recipe from a college friend's grandmother.

2 cups flour
1 3/4 cups sugar
3/4 cups cocoa (I like Hershey's)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla

Mix everything together in mixer and then add 1 cup of boiling water.  BE CAREFUL pouring that water in because it can splash out and burn you!  I turn off mixer and stir in hot water with a spatula and then turn mixer back on.  Batter is very runny!

Pour into well greased ( Baker's Joy) bundt pan.  I usually bake it about 35-40 minutes at 350.  Check it after 30 minutes with the toothpick test. (Does toothpick come out clean?)


The Frosting

Stick of butter (room temp)
Powdered sugar
Heavy cream
Hershey's cocoa
Vanilla


In a mixer add stick of butter and about 1/4 cup of cocoa and 2 tsp of vanilla.  Then comes heavy whipping cream and powdered sugar.  You just have to guess on this.  How thick do you want the frosting?  I do the frosting different every time.
I ALWAYS double the frosting recipe!

When this cake is ready to be served, my cake is half the size it should be.  I eat the batter and frosting as I am making it......pitiful.

Something Good to Eat

Ever since Steve and I started dating, when we would go to Mississippi, his aunt would make the BEST ROAST IN THE WORLD!!!!!!!!!!! Steve's Dad's side of the family gets together at his Granny's house for lunch every Sunday after church. The food is always sooo good!!!!!!!!!!!! Complicated

Maybe I am wrong, but I don't remember life being so complicated when I was in middle school. Everything is so competitive now.  Maybe it was back then and I just didn't realize it. Sarah Kate started playing city league softball a couple of weeks ago.   We've been encouraged to get her private batting lessons. When I was in third grade I started playing softball and I just did it for fun!  No stress at all, as far as I can remember!  I just played.  I wasn't very good, but I liked it! Ha! Emily started band this year!  Before school started, I got a letter from the school district strongly encouraging "your band student to take instrument lessons."  WHAT?  I bought into it and got Emily private clarinet lessons (which she really enjoys)! But, what happened to learning as you go?  I never thought about taking private trumpet lessons when I started band. It seems like most parents are striving for their child to be THE BEST....

Emily is enjoying her first year in band.  I am very impressed with her playing skill! Sarah Kate was recently awarded the empathy award at her school.  She is very deserving of this! Here we are before the Cotillion Holly Ball.
