Bear and Beans


Saturday afternoon the girls and I went to one of Steve's most favorite stores.  The girls and I enjoyed walking around looking at the wildlife displays.  This big bear greeted us at the door.  Sarah Kate refused to have her picture taken with the bear.  She did not want her back to the bear and she wanted to keep her distance.
I feel like that big bear sometimes.  Don't you?  When someone mistreats my children,  I feel the mama bear coming out.



Here is the recipe I made for us on Valentine's Day.  We enjoyed it.  I thought the girls would love it, but they ate like two beans and one bite of sausage.  This is one of those recipes that tasted better the next day.  I thought this recipe was a lot of fun to make!

Biloxi Red Beans and Rice

1lb. red beans
1 1/2 tsp. salt.  ( I used a LOT more)
1 lg onion, chopped
1/2 lg green pepper, chopped
2 slices of bacon
1 rib celery, chopped
1 lb country type sausage (cut in rounds 1/2 inch thick)

Place beans in a large bowl and add water until it is 4 inches above the beans.  They will double in size.
Place beans and soaking water in very large saucepan, add salt and bacon.  Cook until tender.  Add water if necessary; set aside.  Cook sausage in skillet until brown. Saute onion, celery and green pepper in sausage drippings until tender, but not brown.  Combine with beans and sausage and cook until thoroughly heated.  Serve over rice.

We have a smaller outdoor store near where our cabin is, but they have displays too. I took one of the grandkids there last Summer to buy a gift card and she was literally petrified by the huge crocodile. I had to carry her out.

sarah kate and i would get along. taxidermy is my fear. real animals don't bother me much. i hate taxidermy. like chills down my back, want to cry, want to puke, have to close my eyes and hold on to someone near me. it is an awful fear to have because i don't want my kids to be scared and i want to be able to take them to museums. i have made some progress with dear heads and larger animal heads that are far away from me or behind glass. i would never be able to stand near that bear though. i get chills on the back of my neck just thinking about it.

Something Good to Eat

Ever since Steve and I started dating, when we would go to Mississippi, his aunt would make the BEST ROAST IN THE WORLD!!!!!!!!!!! Steve's Dad's side of the family gets together at his Granny's house for lunch every Sunday after church. The food is always sooo good!!!!!!!!!!!! I have always taken a liking to his Aunt Judy's roast. It really is the best roast I have ever had. When we were there on Labor Day weekend, my sister in law asked Aunt Judy for the recipe. Aunt Judy began naming all the ingredients. She said Ranch Dressing mix, and I bugged my eyes out and nearly chocked. I HATE RANCH DRESSING. I don't even like to be in the room with it. I had to focus on the word MIX....not the mayo and butter milk and sour cream that you add to it. Just typing those words makes me shudder. Complicated

Maybe I am wrong, but I don't remember life being so complicated when I was in middle school. Everything is so competitive now.  Maybe it was back then and I just didn't realize it. Sarah Kate started playing city league softball a couple of weeks ago.   We've been encouraged to get her private batting lessons. When I was in third grade I started playing softball and I just did it for fun!  No stress at all, as far as I can remember!  I just played.  I wasn't very good, but I liked it! Ha! Emily started band this year!  Before school started, I got a letter from the school district strongly encouraging "your band student to take instrument lessons."  WHAT?  I bought into it and got Emily private clarinet lessons (which she really enjoys)! But, what happened to learning as you go?  I never thought about taking private trumpet lessons when I started band. It seems like most parents are striving for their child to be THE BEST.  I guess that's a go

Emily is enjoying her first year in band.  I am very impressed with her playing skill! Sarah Kate was recently awarded the empathy award at her school.  She is very deserving of this! Here we are before the Cotillion Holly Ball.
