Pumpkin Pie Anyone?

From the survey I have conducted among my friends, NOBODY likes pumpkin. I LOVE it! If you like pumpkin, you may be one of the three people around who would want to remember this recipe. Every year at the girls school, they serve this dessert at the Thanksgiving dinner. I have gone nuts over it. ( I am usually the only soul there who eats it.)

One large can of pumpkin pie mix
One large box of vanilla pudding mix
Half a container of Cool Whip

Mix these together and pour into graham cracker pie crust. Put remaining Cool Whip over the top.

The first time I made this, I made a terrible mistake. Make sure you buy PUMPKIN PIE MIX. I bought 100 % real pumpkin. It was terrible. It was like eating an old bitter root or something. The pumpkin pie mix already has tons of sugar and spices in it. I can just stand there and eat it out of the can!

I hope two or three of you out there can join me in the love of this recipe.

On to other things.......
When Emily sings "Jingle Bells" she says "Jingle bells, Jingle bells, all in the way."

can't wait to try this. I LOVE pumpkin!

Still ticked at Emily's new lyrics to Jingle Bells. If I'm not sure of the words to songs I make them up too...just have to make sure I don't sing in front of anyone because I've had a few embarrassing moments of sharing my made up lyrics :)

For some reason when I think about a pumpkin I just think of a decoration, not something to eat - haha!!

I love all things pumpkin! You should try making a pumpkin roll with cream cheese filling.

This sounds like a good, easy recipe! I will be trying it.

I love pumpkin. I've been making a super easy pumpkin cake all season. Everyone seems to love it.

1 29oz can of 100% pumpkin
1 box spiced cake mix
2 eggs

Mix all ingredients. Bake in 13x9 pan at 350 for 35-40 mins. Top with some cream cheese frosting, right out of the can :)

Its super moist and delicious!

We make this every year at Thanksgiving at our house. We love it too!

Silly question, do you make the pudding with milk or just mix the powder & the pumpkin? Sounds delicious nonetheless!

Oh my goodness how I love pumpkin! I have gotten a little crazy this year with it...I started out with the normal stuff like pumpkin bread, then moved to pumpkin chili, pumpkin french toast, etc. I loved it all...my family didn't think much of the pumpkin chili. I make pumpkin fudge every year...I haven't made it yet b/c I know I will gobble it up when I do.

I also love pumpkin and love to fix this dip. It's great to dip cinnamon grahams or ginger snaps in! Maybe I'll have to fix this for Matthew since he loves his grahams so much...haha. Emily's comments always make me laugh!

Pumpkin Dip
1 (8 ounce) package cream cheese, softened
2 (7 ounce) jars marshmallow creme
1 (15 ounce) can solid pack pumpkin
1/4 cup powdered sugar
1 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
Directions
1.In a medium bowl, beat together cream cheese and marshmallow creme until smooth. Add in powdered sugar. Fold in pumpkin and spices. Cover, and chill in the refrigerator until serving.
Just as good the next day too, if you want to make ahead.

Something Good to Eat

Ever since Steve and I started dating, when we would go to Mississippi, his aunt would make the BEST ROAST IN THE WORLD!!!!!!!!!!! Steve's Dad's side of the family gets together at his Granny's house for lunch every Sunday after church. The food is always sooo good!!!!!!!!!!!! I have always taken a liking to his Aunt Judy's roast. It really is the best roast I have ever had. When we were there on Labor Day weekend, my sister in law asked Aunt Judy for the recipe. Aunt Judy began naming all the ingredients. She said Ranch Dressing mix, and I bugged my eyes out and nearly chocked. I HATE RANCH DRESSING. I don't even like to be in the room with it. I had to focus on the word MIX....not the mayo and butter milk and sour cream that you add to it. Just typing those words makes me shudder. The recipe sounded awful as she rattled off the ingredients, but I promise, you have got to make this if you like a good roast. Trust me on this. Here it is: Get a tender chuck...

Complicated

Maybe I am wrong, but I don't remember life being so complicated when I was in middle school. Everything is so competitive now.  Maybe it was back then and I just didn't realize it. Sarah Kate started playing city league softball a couple of weeks ago.   We've been encouraged to get her private batting lessons. When I was in third grade I started playing softball and I just did it for fun!  No stress at all, as far as I can remember!  I just played.  I wasn't very good, but I liked it! Ha! Emily started band this year!  Before school started, I got a letter from the school district strongly encouraging "your band student to take instrument lessons."  WHAT?  I bought into it and got Emily private clarinet lessons (which she really enjoys)! But, what happened to learning as you go?  I never thought about taking private trumpet lessons when I started band. It seems like most parents are striving for their child to be THE BEST....

Life in Pictures!

Emily is enjoying her first year in band.  I am very impressed with her playing skill! Sarah Kate was recently awarded the empathy award at her school.  She is very deserving of this! Here we are before the Cotillion Holly Ball.
