Sweet Kids and Sweet Treats

On Friday morning I kept my friend Jaimi's children while she went to a meeting. They were good as could be. I have decided Emily plays better with boys than with girls. Humm.....Sweet baby Jordan. I love this picture.
Jackson and Emily. He is just a precious child.

I used to watch a show every afternoon on TLC called Take Home Chef. It featured chef Curtis Stone. I thought Curtis was WONDERFUL. One day at 3:00 p.m. I settled on the couch turned to Channel 48 and another show had taken it's place. Ohhhhhh....I was distraught. I realized over the next few days that the show was gone. It is probably a good thing, because Steve was a little concerned about my love for Curtis. haha!
Curtis Stone actually cooked things that I would like to eat and I am VERY picky. One day on the show, he did a sweet called Chocolate pots de Cream. I wrote down the recipe and I make it quite frequently. Too much, in fact. I am the only family member that likes it. Oh well, more for me. Steve said it was like chocolate pie without the crust. No.....it is much more than that. That is a good thing for me because I don't like pie crust. It tastes like fried chicken to me. I love fried chicken, but not with pie filling.
Thought I would share the recipe for those who like rich, thick, creamy chocolate. It just makes my mouth water with each delightful bite.

Chocolate Pots de Creme

1 2/3 c. heavy whipping cream
1 1/4 c. whole milk
1/2 c. sugar
1 tsp. vanilla extract
8 oz. semi-sweet chocolate
6 egg yolks

Pre-heat oven to 250
Combine in a sauce pan cream, milk, sugar and vanilla. Bring a a boil. Add chocolate.

Beat egg yolks, slowly pour in chocolate mixture. (let the chocolate mixture cool down a good bit first!!!!) I added it too soon one day and it was like scrambled eggs in chocolate. YUCK!

Cook 50 minutes to an hour in water bath. Cover dishes in foil.
I put them in the fridge for two hours or so before enjoying.

i hate pie crust too! no one in my family can understand why! for me, it's the flakeyness and the texture. i also don't like cooked fruit - so all pie is out for me. :)

Very delicious sounding Laurie. We adore chocolate desserts. I've been holding off eating sugar since I have been losing weight but I can sure splurge once in a while. I used to watch Curtis as well. It was such a cute and fun show. I miss it too!

Blessings, ~Melissa :)
