Hash Brown Casserole

I am tired and my eyes are crossing, but I am going to give you the hash brown casserole recipe and hope it makes sense!
I have some medical oddity that I am calling a "night cold." Ha ha! Every evening for the past week and a half, I get a HORRIBLE terrible sore throat. I lay in bed and clear my throat and pop my throat and cough. I wake in the middle of the night and feel MISERABLE! But, once I get up in the morning I am perfectly fine! Hummmm......
Okay here is the recipe. You will love it. I told you about the DIVINE roast. Trust me on this too!!!!!!

Hash Brown Potato Casserole

1 (32 oz.) pkg shredded frozen potatoes
1/2 c. melted butter
1 can cream of chicken soup
12 oz. grated American cheese
1 (8 oz.) sour cream
1 tsp salt
1/2 onion, chopped fine
2 c. crushed cornflakes
1/2 cup melted butter

Place thawed potatoes in a 9 x 13 baking dish. Mix together next 6 ingredients and pour over potatoes. Top with crushed cornflakes and drizzle butter over all. Bake uncovered at 350 for 45 minutes.
The recipe says that it serves 8 to 12 people. In my house it serves about 3. HA...we love it too much!

I am making this Saturday night along with the roast. YUMMY!!!!!!!!!!!!!

Sorry you are feeling so yucky! Thanks so much for the recipe!! I am going to make it Saturday night for dinner at my father in laws. I have that roast recipe saved for a day over Christmas break!!

Just thinking that maybe you should go to a specialist. I had something similar happening to me all of a sudden. I had a cough and it was only at night. I ended up having reflux and now take a prescription for an anti-acid medication. It worked!
Mine started out as a cough and occassionally I would have horrible heartburn! It was terrible! Anyway, hope you feel better soon! Have a great weekend!

Hi Laurie,

Thanks for the recipe! I have a suggestion if you want to shake things up a bit. Substitute French Onion Dip (sold next to the sour cream in the store) for the sour cream in the recipe. It gives it a kick!

I have the ingredients for the roast and have shared the recipe with several friends. One made it, and her kids (4 and 6 years old) snorkled it up. Thank you for sharing!

1. Whenever I get a cold, it's always worse at night. So either we're abnormal together or it's not just you. :-)

2. My family does a hashbrown casserole similar to this every Christmas morning. It cooks while we open stockings and then we eat it. All. My bro-in-law and I always take our time because we like the top to be just a little brown. You know the only thing better than cheese is slightly burnt cheese. :-)

Wow that does sound good. I have just now got into making casseroles, once I found out how easy they are! That is too funny about your "night cold". Hope it goes away soon!
Sounds like reflux. You can buy Prevacid and it is fabulous!

Oka..here in Utah we call it "Funeral Potatoes"... No lie, it because it's always taken to the after funeral dinner for some reason! I'm not lyi g.. Google it! Ha ha ! I love them!

I can't believe it. I have that too! I was up all night because I can't swallow and I worry I won't be able to make work in the AM. But once I am up it goes away.
